He says, “This is such a healthy lunch idea full of protein and goodness! Perfect light lunch on a sunny day. I can't get enough of Ember Snacks new charcuterie range, full of so much flavour!”

Prep time: 15 mins

Cook time: 20 mins

Serves 2

Ingredients:

  • 100g Ember Charcuterie
  • 2-3 cups rice of your choice 
  • 2 soft boiled eggs 
  • 1 avocado, sliced 
  • 1 red pepper, sliced
  • 10 baby plum tomatoes, sliced
  • Handful of spinach 
  • Handful of chopped herbs 

Instructions:

  1. Cook the rice in a rice cooker or pot as you normally would
  2. Boil your eggs for 6 minutes for a soft boil or depending on your preferred doneness
  3. Slice the avocado, red pepper, tomatoes and chop some herbs of your choice
  4. Once the rice is cooked, assemble your bowl with the rice at the bottom, topped with the veggies and slices of Ember Charcuterie
  5. Finish with some cracked black pepper, salt and chopped herbs
